Roasted Eggplant with Feta & Creamy Yogurt Sauce 🍆✨

Slow-roasted eggplant with salty feta, refreshing garlic yogurt sauce and sweet-tart dried cranberries. Light, creamy and full of Mediterranean flavor. 🤍
Ingredients:
2 eggplants
salt & black pepper
olive oil
fresh basil leaves
feta cheese
Greek yogurt
2 garlic cloves
lemon juice
dried cranberries
fresh parsley
Preparation:
Cut the eggplants in half and score them deeply. Season with salt, pepper, olive oil and basil leaves, then add chunks of feta on top.
Bake at 200°C (390°F) for 35–40 minutes until soft and caramelized.
Meanwhile, prepare the sauce by mixing Greek yogurt, garlic, lemon juice and a drizzle of olive oil.
Serve the roasted eggplants topped with the yogurt sauce, fresh parsley and a few dried cranberries for extra texture and balance.
